Still working on leftover rib roast. It's delicious. We were just eating it as-is, but tonight I stirred it up with some wild rice and tomatoes. It was good that way too.

Leftover canard au vin from our fabulous dinner at White Dog Bistro. It was just as good today. The sauce... I might need to ask them for some secrets. Looked like mushrooms and sun dried tomatoes. ?? Not sure, but whatever was in it, it all worked.

Bottoms Up Pizza on our way back from the Richmond adventure. It was lunch/dinner all in one. Good thing since a slice is about the size of my head. Might as well pack in the calories in time for the new year's diet.

LOL

Tonight's creole mushroom sauce over poached eggs and ham on toast. The sauce is roux, onions, tomatoes, mushrooms, and a little port to fortify the sauce and cook. Smile

Yum! Tonight will be pork chops and sauerkraut. (Yeah... I like that stuff.) Mashed potatoes too. Gotta do the German new year thing because I can't stand black eyed peas and collards.

Beef and barley soup that I made from the leftover Christmas rib roast. I had cut it up and put bones/meat in the freezer. Cooked the bones down in the slow cooker last night, and made the soup stovetop tonight. It is quite good. Think it will be better tomorrow.

Chicken with asiago cheese and spinach stuffing with roasted veggies. The Fresh Market has meals that they sell for $20. This one came with 4 chicken breasts already prepped for the oven, chopped veggies, and chocolate chip cookies for dessert. It was enough for two meals, and three desserts. Smile
