Scallops in a white wine/butter sauce. Garlic summer squash on the side. The rest of the white wine to go with. It is perfect for a hot day. Very light and crisp.

Veggie pasta to use up some of the zucchini and summer squash. It went really well with that same crispy white.

Speaking of crispy white. I had a Chardonnay from South Africa. Stellar Winery, nice light, very crisp with a little tartness. It's not the usual heavy oak/butter that you often get with a Chard.

Grilled zucchini. I cut them in half and scooped out the middles so I had squash "boats." I chopped up the middles, some onion, and some chicken sausage. All that stuff went into a skillet for a quick sizzle. When the juice came out of the squash, I put in some Panko crumbs to tighten it up. Seasonings were salt/pepper/dry thyme.

I put the filling into the boats, topped with Parmesan, and put in a pan on the grill. They took about 15 minutes to cook up, and were so good. As with all things summer squash, it made way too much, so I think I know what's for dinner tomorrow. Smile

OMG, that sounds soooooo good!

Last night was fruit salad in the car on the ride home (I hadn't eaten for 19 hours) and leftover bbq pork roast when I arrived home. I was exhausted.
Tonight I had a can of chicken & dumplings with a couple apples....after a 4 hour nap!

I did....finally back to normal if waking up to my mind racing what will I do if they yank my medical now can be considered normal.

Last night was pizza in a bowl, tonight is leftover turkey with a roll from the party one of the upstairs neighbors had for her visiting son and she was giving it away. She had tons of food left over and no room in the fridge for it all.

Chicken and dumplings sounds so GOOD. I am traveling for work this week. Maybe I can find a good Southern food restaurant in Richmond that makes that. Nothing like it even in hot weather. Smile

Lunch is going to be gazpacho. My friends' gardens are giving me a ton of tomatoes and cucumbers. Sounds like summer soup to me. My poor garden did not do well this year. I need to pick a different spot. Maybe I'll make some raised beds for next year.

Tonight is going to be marinated chicken with sweet potatoes on the grill. No ovens on in the house with the heat outside. Everything goes on the grill.

I did some grilled lamb chops, with sauteed spinach and fried polenta. I was hacked because my favorite condiment for lamb was spoiled and none to be had until fall.

No mint jelly huh? I can't eat lamb.....I met one once and it was so cute and tiny and took a nap on my lap. How could I eat it's cousin after that?

Becky, maybe the soil in your garden patch needs something added to it to 'fix it' like we did for our tomatoes. No blossom end rot this year, just odd tiny black spots on the sides.

It's a cranberry-orange chutney. I love the stuff and the only time it's to be had is around thanksgiving.
