Chicken tortilla soup without tortillas. Smile We put corn in it instead. I am not a fan of soggy chips.

Panera green goddess salad. It was surprisingly tasty and not TOO fattening. I asked for 1/2 dressing, which was the perfect amount.

Flounder with a side of asparagus and yellow squash. Nice, light spring meal. A beautiful dry white to go with. YUM. That's a way to top off a day of hard yard work.

Did some baked chicken thighs. I used limes, yogurt and Cita's Garden Green Salsa. I need to send you a jar of this. The woman who started this company developed this in our kitchen while doing community service here. It was great.

It sounds DELICIOUS. Smile I can send you a can of Old Bay or another local delicacy if you want. We have some awesome sandwich stuff from the Cheese Shop that they just started bottling. It makes incredible veg dip too.

I've had Old Bay and it's never done anything for me. The citrus chicken with fruit sounds wonderful.

Citrus chicken is easy: poach/panfry until it's nearly done, cut it into bits, add some lemon juice, orange extract, a bit of soy sauce, and a pinch of ginger if you have it...let simmer until it almost completely evaporates into a sauce.

Something easy and quick, I hurt too much from the rainy weather to do something fancier. Maybe soup or a sandwich.

Today was a simple rotisserie chicken from the grocery. I was tired after riding and driving, so easy was good. It was extra big, which is good.

Homemade chicken Alfredo with the left over chicken. I like the home made stuff so much better than the sauce in a bottle.

Pasta primavera with pesto. I've never made pesto before, but I have a bumper crop of basil. Got to do something with it.

Veggie chili. I put some summer squash in it, and that turned out really well. I liked it more than chicken chunks.

Stuffed peppers with all garden veggies. My neighbor gave me peppers. I have squash from my garden and the CSA, and tomatoes from the farm store. My tomatoes are not ripe yet. I'm getting impatient. Smile
