Crab omelets......sounds good.

I have to have something to go with zucchini, I still have 3 monster ones in my fridge and will probably get more tomorrow from the pantry. If it wasn't so hot out in the afternoon I'd slice that zucchini, top it with slices of tomato as well as some parmesan and mozzarella.

There's a recipe online for zucchini (zoodle) pad thai. It's delicious.

Today was a roast chicken from the grocery with some of the garden potatoes and beans.

Is it bad that I don't like fried okra? I tried to fry some up for lunch. Pan fried in a cast iron skillet. I just didn't like it. I pitched it and went for reheated supper.

It was and the portions were huge. Tonight it's lamb chops, mashed pototoes and sauteed spinach.

Tonight was fritata night. Potatoes, steamed kale, caramelized onions, and cheese. It turned out really well. I don't have a non-stick skillet tut's the right size, so I lined my medium stainless one with non-stick foil. Perfect solution. Smile

Healthy eggplant parmesan. I didn't fry or bread the eggplant. I just roasted it until it was a little brown around the edges. Then I put on the sauce and cheese, and served over whole wheat pasta. It was very tasty.

I had a p.b. wrap with loads of fresh fruit for dinner. No cooking.
Might do something like that tonight too. It's just too #@$%! hot to cook anything.

I might be having some turkey sausage with watermelon for dinner tonight. I have leftovers of both in the fridge. After a long day today it won't take long to have it ready.
